Unexpected beer meeting with friends

The phone is ringing and some friends are coming home for a beer! They will bring the beers!
But what about you? The only beer-dish in your fridge is cheese* ………… HELP!!

So this is the time to make the fastest and so special “bourekakia” they have ever eaten!

Bourekakia with cheese

The easiest dough you ever came across is this one. And when you fill it with cheese it is a dish that tastes like a dream! All you need is flour, yogurt, oil and the cheese that is already there.

Get ready!!

*when saying cheese I mean a “feta” like hard white cheese or goat cheese

    for the dough
  • 1/2 kg flour (with baiking powder)
  • 1 drained yogurt
  • 1 cup olive oil
  • 1 tspn sea salt
  • For the stuffing
  • cheese
  • 2-3 eggs
  • pepper


    preheat you oven in 250 C
    for the dough
  1. put all the dough ingredients in a bowl and mix them with your hands, it is easy and the result will be smooth and soft
  2. seperate it into orange like size balls
  3. for the stuffing
  4. crumble the cheese and with a fork's help mix it with the eggs and the pepper (do not afraid to put a little more than you usually do, it fits so much)
  5. prepare the bourekakia
  6. put cooking paper in a pan
  7. open each ball on your table and put some of the cheese stuffing (a tablespoon will be enough) in the centre
  8. fold it up to look like a half moon
  9. put all bourekaia in your pan
  10. brush them with mixed egg if you like and throw some sesame over them
    put them in the oven and in 20-25 min they are ready. Hot, and tasty!
